
Watermelon and feta salad with prawns and balsamic dressing
Ingredients for the salad:
- 200 g watermelon, cut into cubes
- 100 g feta cheese, crumbled
- 200 g prawns, peeled and deveined
- 100 g blueberries
- 1 head of lettuce, washed and picked into bite-sized pieces
- 1 handful of fresh mint leaves, roughly chopped
- 1 handful of fresh basil leaves, roughly chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Ingredients for the dressing:
- 1/2 cup fresh or frozen raspberries
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tbsp honey or maple syrup
- Salt and pepper to taste
Preparation:
- Heat 1 tbsp olive oil in a frying pan. Add the prawns, season with salt and pepper and fry for 2-3 minutes on each side until pink and cooked through. Remove from the heat and set aside.
- In a large salad bowl, mix together the lettuce, diced watermelon, crumbled feta, blueberries, fried prawns and chopped mint and basil leaves.
- Place the raspberries in a small bowl and mash them with a fork until they are pureed.
- Add the balsamic vinegar, olive oil and honey or maple syrup.
- Season with salt and pepper and mix well until a smooth consistency is achieved. Then pour the dressing over the salad and mix so that all the ingredients are evenly coated.
- Serve the salad immediately to make the most of the fresh flavors.
