Watermelon and feta salad with prawns and balsamic dressing

Ingredients for the salad:

  • 200 g watermelon, cut into cubes
  • 100 g feta cheese, crumbled
  • 200 g prawns, peeled and deveined
  • 100 g blueberries
  • 1 head of lettuce, washed and picked into bite-sized pieces
  • 1 handful of fresh mint leaves, roughly chopped
  • 1 handful of fresh basil leaves, roughly chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Ingredients for the dressing:

  • 1/2 cup fresh or frozen raspberries
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Preparation:

  • Heat 1 tbsp olive oil in a frying pan. Add the prawns, season with salt and pepper and fry for 2-3 minutes on each side until pink and cooked through. Remove from the heat and set aside.
  • In a large salad bowl, mix together the lettuce, diced watermelon, crumbled feta, blueberries, fried prawns and chopped mint and basil leaves.
  • Place the raspberries in a small bowl and mash them with a fork until they are pureed.
  • Add the balsamic vinegar, olive oil and honey or maple syrup.
  • Season with salt and pepper and mix well until a smooth consistency is achieved. Then pour the dressing over the salad and mix so that all the ingredients are evenly coated.
  • Serve the salad immediately to make the most of the fresh flavors.
