Cheese quesadillas with tomato salsa

Ingredients (for 2 to 3 pieces):

  • 2 large tortilla wraps
  • 100 g grated cheese (e.g. Gouda, cheddar)
  • 1 spring onion or sweetcorn
  • 1 small diced bell pepper
  • Optional: kidney beans, chicken strips, jalapeños
  • Oil or butter for the pan

For the salsa:

  • 1 to 2 tomatoes, diced
  • Squeeze of lime juice
  • Salt and pepper
  • Optional: chopped parsley or coriander

Preparation:

  • Top half of wrap with cheese and remaining topping and fold together (half-moon shape).
  • Fry in a pan with a little oil until golden brown.
  • For the salsa, mix the tomatoes with the lime juice, salt, pepper and herbs.
  • Cut the quesadilla into pieces and serve with the salsa or fill the salsa directly into the wrap.
  • Wrap in aluminum foil or sandwich paper to take away.
