Fitness cheesecake

Ingredients (8 portions/87 Kcal per piece)

  • 500 g low-fat quark
  • 200 ml low-fat milk
  • 3 eggs - size M
  • 1 sachet vanilla pudding powder
  • 80 g birch sugar - xylitol
  • 1/2 lemon - juice and zest

Preparation

  • Preheat the oven to 175 degrees fan.
  • Place all the ingredients in a bowl and mix to form a dough.
  • Pour the batter into a round silicone mold (Ø 17 - 20 cm) and bake for approx. 50 minutes.
  • Leave the cake to cool and then place in the fridge for at least 2 hours.
  • Then carefully remove from the mold and serve with optional powdered sugar
